- 1200 g milk
- 79 g heavy cream
- 50 g non-fat milk powder
put milk and cream to heavy saucepan
add dry ingredients
add corn syrup
cook over medium high for aprox 10 minutes - stirring the entire time. Start out stirring slowly then increase the speed/frequency as it gets closer to being done. Once you feel the mixture thicken take it off the stove - stir a few times more.
Pour through a strainer into a bowl that is sitting in an ice bath
put plastic wrap on top immediately to prevent forming a skin on top (and to prevent condensation in refrigerator
Once it is complete cool place in the fridge to cure Ideally it should cure for 4 hours to overnight
Using an immersion blender, incorporate caramel. Make sure it's all incorporated - no lumps.
