And it’s fabulous.  This is a four letter kind of dessert – the reactions are shocking.


Ok this photos is a lie. It’s vanilla.  But the burnt carmel is a real thing.   Cross my heart.  And it’s coming here as soon as I can figure out this rubik’s cube of hellish website building.

Burnt Carmel Gelato

Life changing.  Make it.  Eat it.

  • 1200 g milk
  • 79 g heavy cream
  • 50 g non-fat milk powder
  1. put milk and cream to heavy saucepan 

  2. add dry ingredients 

  3. add corn syrup

  4. cook over medium high for aprox 10 minutes - stirring the entire time.  Start out stirring slowly then increase the speed/frequency as it gets closer to being done.  Once you feel the mixture thicken take it off the stove - stir a few times more.   

  5. Pour through a strainer into a bowl that is sitting in an ice bath 

  6. put plastic wrap on top immediately to prevent forming a skin on top (and to prevent condensation in refrigerator 

  7. Once it is complete cool place in the fridge to cure  Ideally it should cure for 4 hours to overnight 

  8. Using an immersion blender, incorporate caramel.  Make sure it's all incorporated - no lumps. 

  9. process according to your ice cream makers instructions. blah balh
